pasta sauces? Store what long term?
 
What should I keep in long term storage to make something to put on my pasta?

I was thinking:

Tomato Powder - http://beprepared.com/product.asp?pn=FS%20V160
Powdered Cheese - http://beprepared.com/product.asp?pn=FS%20D105
Creamy Soup Base - http://beprepared.com/product.asp?pn=FS%20C140

What am I missing? Any other long term items besides herbs and spices?

I know you are probably thinking of dry type items, as opposed to wet. But Costco has #10 cans of tomato sauce, tomato paste, tomato puree. All are less than 3 bucks for a #10 can, such a deal! I could fill my entire garage with #10 cans. I wish I had a basement to do just that. Anyone seeing such a thing would probably freak out!

I would opt for the tomato paste as that would have a longer shelf life with water and spices you can make it tates just as good as ragu.

Long term I think your best bet is pressure canned tomato sauce in glass mason jars if you don't want to make it from dry ingredients.

What if you just make a giant batch of sauce from regular foods (i.e. tomatos, ground beef, onions, garlic, herbs/spices, etc.) and then freeze several packages of it? Then when you want some pasta, open one up and warm it up on the stove.

Or is this in the event that there's no electricity or way to keep things frozen?

I'm keeping lots of pasta sauce on the shelf now, but for this I am thinking for a true emergency where there is no refrigeration, something with a very long shelf life. So mix dehydrated stuff with water type sauce.

We make up cases of spaghetti sauce when tomatoes come in.....mix with ground beef so we can simply open a quart and use it on spaghetti or whatever pasta.


LONG term your best bet would be non-hybrid tomato seed....and a cow :D

You can dehydrate spaghetti sauces into a very small size.The whole story is here.They rehydrate into something that is 100% unchanged from the jar stuff.

This is 3 bags of spaghetti,about 34 lbs sauce in 3 bags (1 is behind another) and 7 lbs. of refried beans easily on the freezer door! Total weight less than 6 lbs!
Or 20 cans of 26 ounce sauce and a #10 can of beans equivalent.

A couple unconventional spaghetti sauces I like you might want to try if you're open minded.......

Soy sauce, mixed with water to taste, is pretty good. With enough liquid it can even be used as a soup.

Also, a welfare spaghetti sauce is ketchup, with pepper, chili, salt, or other spices is nice.

Spaghetti is noodles. I'd say anything you like as a soup or with noodles...... I havent tried these, but if you're brave: maybe chicken or beef broth might be nice, with canned vegetables added. Maybe bullion cubes. Or canned soups. Butter with salt and pepper. I often eat ramen noodles without using the flavor packs, those might be good. I like Franks Red Hot, I use it with salt and pepper in tomato and vegetable juice, but never tried it on noodles, it makes lots of bland or not so tasty stuff taste good. I also often see powdered flavor packs for tacos, gravy, or all kinds of other stuff in the store........ grossed out yet?

Might not be the answers you were looking for, but I thought I'd throw in my 2 cents.

Your link for cheese went to cheese blend. Don't get that thinking it's the sort of cheese you'd put on most pasta. You know the sort of cheese flavoring they sell to be sprinkled on popcorn? That's what it is. It will reconstitute into something that you might be able to use to make macaroni and cheese, but I can't imagine it on any other type of pasta and certainly not with tomato sauce. It's very orange and has a very strong, strange taste that I wouldn't describe as resembling cheese...kind of like mac and cheese made with cheese-flavored popcorn seasoning. It's pretty icky. I tried making mac and cheese with it once. I couldn't choke down a single bite, and even my husband and my dogs, who all adore anything with pasta and cheese, sniffed it and refused to try it. I saved a jar of it for popcorn seasoning, and threw the rest of the #10 can away, knowing I wasn't going to use it for anything else. Pay the extra bucks and get the real FD cheese. It's not too bad (if you want to see what it's like, go to the grocery store and buy one of those boxes of FD cheese and hash brown mixes meant to be used with hamburger).

I've heard the FD tomato powder can be used for both paste and sauce, depending upon how much water is added to it. Because the cans are rather expensive, I've not been able to make myself open one and try it yet. I've read that it's quite good, though. I intend to try to make some beef and barley soup with some one of these days.

No,I just have extra freezer space and we use it a lot,so its convenient.Also cant hurt anything being in the freezer and might help,so why not?Sure did free up a lot of shelf space getting rid of those big cans of sauce.

I will probably put in vacuum sealed jars when the pumpNseal arrives.Mrs stores her dried spices we make in mason jars with plastic lids,works ok for what it is.

Since I don't have the food storage to last beyond a year or two of rotation anyway I don't worry about it...

With that said tomatos are highly acidic and should last a good bit past their expiry dates. Specialty suaces with lots of cheese or meat in it may vary, but regular ole tomato sauce or pasta sauce should push out atleast 6 to 12 months past expiry. That means the cans hunts I bought for 88 cents and the ragu for 90 cents last month with expiry dates of mid 2010 should be good until atleast January 2011 IMO. They won't last that long I only have a combined total of about 60 jars/cans on hand and thats about 60 weeks of regular meals anyway. I love pasta and we eat it 1 meal a week usually.

If I had the storage space I'd have atleast 180 jars/cans on hand. Going to eat it anyway!

I just finally opened a can of dehydrated tomato powder from emergency essentials. It reconstitutes to be identical to tomato paste as far as I can tell. It has a slightly richer flavor and it a bit more of a tangy bite to it, but no one would ever suspect that it came from a powder. This is the tastiest LTS item i've opened yet. bancha

Here is a bulk recipe for a cheese sauce mix that works well. Use over pasta, cheesy potatoes, or as a dip for chips.

Cheese Sauce Mix

4 1/2 cups dehydrated cheese (or cheese blend)
2 2/3 cups powdered milk
2 2/3 cups dehydrated butter
2 2/3 cups flour
2 tsp onion powder (or minced onion)

Mix and store in airtight container. Using it is simple:

Basic Cheese Sauce

1 cup hot water
1/2 cheese sauce mix
bring to boil, stirring with whisk

add green chiles etc for chile con queso dip

I keep 5 cases of sauce. That's 60 jars, each a meal for 4. I figure that's enough for a year. I restock whenever it goes on sale.
